Crux brewmaster Larry Sidor is always in pursuit of the next great beer—beer that defies taste profiles with its complexity and creativity. We’ve designed our brewery to allow for non-traditional brewing methods like decoction mashing, open fermentation, oak barrel aging, wild yeast strains and experimental hops. Larry Sidor graduated from Oregon State University with a food science degree and spent the next 23 years in Washington, working at Olympia Brewing Company. From there, he held an eight year tenure at Deschutes Brewery, creating some of the breweries most renowned beers including Red Chair Pale Ale and Inversion IPA. But ultimately, his goal was to open his own brewery. In 2012, Crux Fermentation Project was born.
Featured Brewery - Crux Fermentation Project
Housed in a former transmission shop and mill supply store, Crux Fermentation Project was built by a community of beer lovers. It's industrial setting against Highway 97 and Old Mill adjacent, grants the brewery a 'best kept secret' vibe, and friendly servers and bartenders lend a down-home feel. While the beers are certainly the main event, nightly sunsets from the patio on warm summer nights have created a steady buzz among beer-loving locals.
