Seasonally Focused Menus
Mining the rich bounty of Central Oregon, all our produce is local and seasonally inspired. Led by award-winning Executive Chef Karl Holl, our Culinary Team takes pride in showcasing local purveyors and artisans. Everything, from our signature handcrafted s’mores by the fire, to special dining and tasting events, celebrates the generosity of nature in the Pacific Northwest. Reservations are open to non-resort guests. Hours are subject to change seasonally.
Wild Rye
Wild Rye is a new addition to the culinary and cocktail experience at Brasada Ranch—defining Central Oregon’s high desert cuisine. Led by Executive Chef Karl Holl, every dish is intricately tied to the land, the season, and the lifestyle of the region, whether foraged from the surroundings, grown by Central Oregon farms, or philosophically connected to the desert. Hours and availability adjust seasonally.
The Foraged Dinner

Experience an exceptional four-course dinner inspired by the season's rarest mushrooms, gathered and prepared by Wild Rye's chef and forager Karl Holl and expertly paired with wines from The Marigny & St. Reginald Parish. The evening will be held in The Barn and accompanied by a cocktail demonstration from Scott Baird and live music.
General Store
Fuel your adventure with an array of pantry staples, local artisan products, and farm-fresh fruit and vegetables. As well as grocery essentials, our General Store stocks an array of handcrafted sandwiches, platters, pre-prepped meals and a thoughtfully curated selection of local wines, beers, and ciders.
Ranch Platters
Retreat to the comfort and serenity of your cabin and order a meal pre-prepared by our Culinary Team. With step-by-step instructions, cook American classics including NY strip steaks, house-smoked pulled pork, and salmon fillets. Accompanied by a choice of sides and a bottle of wine from our curated selection, this is intimate comfort dining for the ultimate night in.
Please place your order by 11 AM for pick up between 4-6 PM or delivery the following day.

Our Culinary Team has prepared a variety of special holiday meals over Thanksgiving, Christmas, and New Year's to enjoy with your family and friends this season.
Signature S'mores
AVAILABLE DURING DINNER SERVICE
Guests dining with us are invited to grab drinks or s'mores a la carte from the bar and head outside for a post-dinner family fireside experience. Gather around the firepit, roast our famous handcrafted s'mores, sip on cocktails, and enjoy the high desert views or an infinity of stars.
